How many drinks does 500 g make?

At a 2 g dose, 500 g makes about 250 drinks. It is a good format to test real demand.

How do we avoid clumps in matcha during fast service?

Sift the powder once a day, then whisk in 60 ml of water at 75–80 °C before adding milk. With a stable recipe, the latte stays smooth even at peak service.

What water temperature should we use for matcha?

Between 70 °C and 80 °C. Boiling water extracts too much bitterness. A kettle with temperature control is the single most useful investment for consistency.

How long does an opened pack of matcha keep?

In a cool, dark, airtight container, an opened pack keeps its colour and flavour for about 4 to 6 weeks. For service, order pack sizes that match real rotation.
