Iced ube matcha latte
Purple ube, green matcha and chilled milk: make our iced ube matcha latte with the organic Yabukita matcha from Yame selected by Maison Genkai and ube powder from our partner UBÉRA.
Makes one large glass · Preparation: about 5 minutes
5 g ube · 2 g matcha · 180 ml milk · ice cubes
Ingredients
- 5 g UBÉRA ube powder
- 2 g organic Yabukita matcha from Yame
- 30 ml hot water for the ube
- 60 ml water at 70–80 °C for the matcha
- 180 ml cold dairy or plant-based milk
- Ice cubes
- Optional: a little maple or agave syrup, to taste
You will also need a large glass of around 350–400 ml, a small mixing container, a bowl, a spoon and a bamboo whisk or milk frother.
How to make it
- Mix the ube. Combine the 5 g of powder with the 30 ml of hot water, adding the water gradually. Stir or froth until evenly mixed. If you would like to sweeten your drink, add the syrup now.
- Whisk the matcha. Sift the 2 g into a dry bowl. Add the 60 ml of water at 70–80 °C, then whisk in a W motion until no dry clumps remain. Let it cool briefly.
- Add the milk. Pour the ube mixture into the glass and add the ice cubes. Slowly pour the 180 ml of milk over the ice or the back of a spoon.
- Finish with matcha. Pour it slowly over the milk. Serve straight away, then stir before drinking to bring the flavours together.

Which milk should you use?
Oat milk is a good option for a rounded texture. Soy or dairy milk also works. Plant-based milks vary in sweetness, so taste before adding syrup. Start with an unflavoured milk if you would like the matcha to stand out.
Small details that make preparation easier
- Mix the powders separately. Adding them straight to cold milk makes clumps harder to break up.
- Avoid boiling water for the matcha. Our Yabukita preparation instructions recommend 70–80 °C.
- Pour slowly for the layers. If the colours blend, your latte is still ready to enjoy. The appearance also depends on your milk and ice.
- Make it just before serving. Melting ice gradually dilutes the drink. Adjust the milk to your liking next time.
Frequently asked questions
Does this latte contain caffeine?
Yes. The matcha contains caffeine even though the ube powder does not. For a caffeine-free version, make an ube latte without matcha.
Do I need a bamboo whisk?
No. A milk frother can also mix the matcha. Whichever tool you use, sift the powder and mix it with the water before adding milk.
Can I mix the layers straight away?
Yes. Layering shows off the colours, but the drink is meant to be stirred before you enjoy it.
