Which Matcha Should You Choose for a Matcha Latte?

Yabukita: structured and versatile

Tsuyuhikari: floral and velvety

Tsuyuhikari places more emphasis on floral notes, a velvety texture, creamy foam and mild bitterness. It suits a more delicate latte with whole milk or a neutral plant milk.

A ratio for a fair comparison

Test both teas with the same protocol: 2 g of matcha, 40 to 60 ml of water at 60–70°C and 150 to 180 ml of milk. Sift the powder, make a smooth concentrate first, then add milk. Taste before sweetening. If the tea disappears, reduce the milk before increasing the dose.
